Quick, Easy & Delicious Tomato Basil Soup
Are you a soup lover? I realize that as temperatures warm, soup may be moved off of your menu. But can I tell you that this tomato basil soup is perfect ANY time of the year.
Recently I shared with you the grilled cheese tomato soup that we love.
But, sometimes you just need a basic creamy tomato soup that is fast and easy.
This soup recipe ticks all the boxes.
My husband’s comment? “this is the soup I’ve been waiting for all my life”! He LOVES tomato soup and had been asking for just soup with no grilled cheese added for a while.
My pantry had everything I needed to please him…and perhaps yours will, too, when you see the ingredients.
In 30 minutes, the soup was ready to add to the table.
Tomato Basil Soup filled the bowls.
And man, oh, man! This one is a winner!
Creamy Tomato Basil Soup
Equipment
- 1 Dutch oven or Stockpot
- 1 liquid measuring cup
- 1 Stove
- 1 cutting board
- 1 chef's knife
- 1 set measuring spoons
- 1 immersion blender
Ingredients
- 4 T Butter
- 2 T olive oil
- 1 C yellow onion, diced
- 4 cloves garlic, minced
- 1 T sugar
- 1 C chicken stock
- 2 28 oz. cans tomatoes, chopped, juice included or 2 qts home canned
- 1/4 C heavy cream
- 8 fresh basil leaves, chopped
- 1 T fresh oregano, chopped
- salt and pepper to taste
- Parmesan cheese and fresh basil for topping
Instructions
- Finely chop onions.
- Add olive oil and butter to a Dutch oven and add diced onions. Saute until translucent about 5 minutes
- Add minced garlic to the onion and continue cooking about a minute.
- Add tomatoes with juice, chicken stock and sugar for about 12-15 minutes until beginning to thicken.
- Stir in cream, basil, oregano and salt and pepper to taste.
- Remove from heat and use an immersion blender to puree the soup.
- Add to serving bowls and top with Parmesan cheese and fresh basil. Feel free to add croutons or serve with a grilled cheese.

Do you need this soup in your life?
We do!
With fresh basil and oregano in my herb garden, this just added freshness to this soup. Feel free to use 1/4 t dried oregano if you don’t have fresh…but I still recommend picking up fresh basil in your produce section if you don’t have it growing.
One other tip that you may not know. Add 1 T of sugar to your recipes that have tomatoes to reduce the acid and balance out flavors. It’s just a part of homemade spaghetti sauce and marinara sauce, too.
Feel free to add toasted croutons or a grilled cheese with this creamy tomato basil soup recipe. It doesn’t need it, truly, but it’s a great combination.

I love tomato soup! And 30 minutes is perfect! This is an easier recipe than our other tomato basil recipe. Heavy cream! Going to give it a try!
