It’s Strawberry Season With a Great Salad Recipe

I love strawberry season and my friends at Hayco Farms have their market open! I was so excited to get my first pint of locally grown strawberries today that it called for a great salad recipe. Anybody ready?

Truly so easy. Quick and delish!

Now if you want to make it easy, you can simply top with your favorite dressing; but, I have included a quick and easy dressing that is the perfect compliment to the baby spinach and fresh strawberries.

I also toasted some pine nuts in a dry skillet and added those to the top.

Yum!

Strawberry Spinach Salad

A quick and delicious salad that takes advantage of the fresh produce of spring!

Ingredients
  

  • Baby spinach leaves Washed
  • Strawberries, washed/sliced
  • Pine nuts, toasted

Dressing

  • 1/4 C olive oil
  • 2 T vinegar you choose- I had rice wine and used that.
  • 1 T sugar
  • 1 green onion, sliced
  • 1/2 t. Worcestershire sauce
  • 1/2 t. salt
  • 1/4 t. black pepper freshly ground

Instructions
 

  • Toast pine nuts in a dry skillet.
  • Wash spinach and strawberries. Slice strawberries.
  • Add spinach leaves to your serving dish and top with sliced strawberries and toasted pine nuts.
  • Whisk together dressing ingredients and drizzle over salad to taste.

A fast and delicious salad that highlights spring produce! 
TIP: I make the dressing ahead, toast the pine nuts and then I have both ready when I am ready for a single serve salad or have something quick for dinner.
Perfect for lunch or to add to an evening dinner menu.

Enjoy all of the bounty of spring. Look for new ways to prepare and serve and enjoy produce! A new salad is always a win as we launch into spring.
