How About a Great Cranberry Pasta Salad?
It’s cranberry season, friends! If you have followed me long, you know that I have become a huge fan of Mad Dash Mixes. In my pantry out came the Cranberry Pasta Salad mix that was the MOST PERFECT dish I have had in a long time.
Even though this recipe calls for chicken (and rotisserie chicken used was FABULOUS!), I couldn’t help but think that this was the perfect solution for all of the leftover Thanksgiving turkey that will need great solutions to continue enjoying it.
Cranberry Turkey Pasta Salad to the rescue!
This salad is so fast and easy–AND delicious–that all of us were amazed when we had it for lunch today!
I couldn’t wait to share it with you so that you could have it handy and ready during upcoming holidays to use with either leftover turkey OR rotisserie chicken. Perfect solution to have on hand.
So…here’s the FAST and EASY Cranberry Pasta Salad recipe…
Cranberry Pasta Salad
Equipment
- Stove
- saucepan
- cutting board
- chef's knife
- can opener
Ingredients
- 1 package Cranberry Pasta Salad -Mad Dash Mixes
- 1/2 C mayonnaise
- 1 can mandarin oranges, drained
- 2 C diced rotisserie chicken or turkey I actually used half of a large (Costco) rotisserie chicken, so adjust accordingly to your likes.
Instructions
- Add water to a saucepan and bring to a boil. Add pasta and cook for 7-10 minutes. Drain.
- In a bowl, mix together mayonnaise and cranberry pasta salad mix.
- Add chicken or turkey, oranges and pasta.
- Chill for an hour. ***We couldn't wait and served ours immediately and it was perfect!
