DELICIOUS Gluten Free Chicken and Dumplings
Can I tell you that when this gluten free world began, my husband and I looked at each other and didn’t understand. That is until one day he noticed anything with gluten made him feel bloated and uncomfortable.
Hence, the moving to more gluten free recipes began.
Has that happened to you? Are there members of your family or friends that are steering clear of gluten?
I just assumed last week that if I switched out Bob’s 1 to 1 gluten free flour for dumplings that I would get the same product.
WRONG!
My husband did NOT complain with those gluten free chicken and dumplings…but the consistency of the dumpling dough was far from right.
Enter…the NEW delicious and easy version of gluten free chicken and dumplings today.
I knew that doughs often need more moisture with gluten free flours, but today, I doubled the milk in my original recipe.
Nothing else changed except an ease of using chicken broth and chicken that I had already cooked.
So, here’s the BEST gluten free chicken and dumplings recipe. Better than ANY I have made with gluten flours.
You heard that right.
Gluten Free Chicken and Dumplings
Equipment
- 1 dutch oven
- 1 chef's knife
- 1 cutting board
- 1 set Measuring cups/spoons
- 1 liquid measuring cup
- 1 strip parchment paper
- 1 Stove
Ingredients
- 5 C chicken broth
- 4 C boneless, skinless chicken breasts- cooked and cut into bite size pieces or rotisserie chicken
- 2 T butter
- 1 stalk celery, finely diced
- 1 whole carrot, peeled and grated
- 1/2 C onion, diced
- 1 T Better than Bouillon chicken stock
Dumplings
- 2 1/2-3 C Bob's 1 to 1 gluten free flour
- 1 t baking powder
- 1/2 t salt
- 1/3 C shortening, butter, or coconut oil
- 1 1/4 C milk
Instructions
- Chop onion and celery and add to dutch oven with butter to saute until translucent.
- Grate carrots and set aside.
- Add chicken broth and Better than Bouillon to stock pot.NOTE: Better than Bouillon may create an issue with those with gluten sensitivity. That ingredient has not been a problem for those with gluten sensitivity here. Omit if you have concerns or are cooking for those with celiac's.
- If cooking chicken in broth, cut chicken into cubes and drop into broth to bring to a boil. If using rotisserie chicken, cut into bite sized pieces and add to broth.
- Add grated carrot into broth mixture.
- While chicken is cooking, make dough for dumplings.
Dumplings
- Add flour, baking powder, and salt into a mixing bowl and whisk together.
- With a pastry blender, cut shortening, butter or coconut oil into flour mixture until it looks like coarse crumbs.
- Pour in milk and stir to make a dough. TIP: I have found that I don't want the dough too wet. The dough should release easily from the parchment paper covering it after rolling…if not add a little more flour.
- Lay out parchment paper and place dough in one side of parchment paper and fold paper over to roll dough in between the parchment paper.TIP: make sure that you have a large enough piece of paper to roll dough out to 1/4" thickness between the two pieces of paper.
- Cut dough into strips about 1" long and wide.
- Drop dough into the boiling broth one at a time, separating them as you drop them into the liquid to prevent them from sticking together.
- Cook until dumplings are puffy and broth has thickened.
- Add to bowls and serve immediately.
Notes
TIP: Using rotisserie chicken and chicken broth makes this recipe quick and easy.

These are delish! My family loves my regular chicken and dumplings and my hubby is a very picky eater but our daughter has gone gluten and dairy free recently and these were a hit with our whole family. I used water in place of the milk and the dumplings were perfect! This is my new go to dumpling recipe.

Excited to make this for dinner! Just curious…do you use a gluten free version of the better than bouillon? It looks like all versions contain gluten according to a google search. I decided to just omit the bouillon and I hope it does take away too much. Would hate for someone with a gluten allergy to make this recipe and trust that all ingredients are gluten free. 🙂

I don’t use a gluten free version of the better than bouillon and those who have gluten issues in my family have had no issues with using it. I would avoid for sure for those with celiac’s.

I have added a note on that recipe to omit if concerned. I have made these with better than bouillon for many of my gluten sensitive family members with no issues; but, it may be a problem with other or those with celiac’s to avoid. It’s always good to leave it out if you have concerns, for sure. I am always looking for a gluten free version. Let me know if you find one.
