An Easy Corn Chowder Recipe
Do you love corn chowder? It’s the beginning of soup season since the weather is changing here. My husband has been BEGGING for me to find a great corn chowder recipe…and this one brought him joy.
I’ve shared Mad Dash Mixes with you before with the Cheesy Chicken Enchilada soup and the lemon cheesecake tarts, but we hadn’t tried the Corn Chowder Soup mix before.
Verdict…that corn chowder recipe will be made again.
These mixes are great in that they supply the seasoning so the balance is perfect and you just keep adding their suggestions (or your own ingredients) to make it your own.
I LOVE that!
Since I didn’t have a rotisserie chicken to add to this one, I found shrimp in the freezer that sounded like a great combination for this soup.

If you need a quick, easy and delicious soup to make for a meal, these mixes are a lifesaver! After a long day they provide delicious comfort food that doesn’t require a great deal of time, ingredients or effort.
The hardest thing was peeling and dicing the one russet potato that I chose to add.

Here’s how easy this corn chowder is to make:
Creamy Corn Chowder Soup
Equipment
- dutch oven
- can opener
Ingredients
- 1 pkg. Mad Dash Creamy Corn Chowder Mix
- 2 C water
- 2 C half and half
- 1 russet potato, peeled/diced
- 1 can creamed corn
- 1 pkg. frozen corn
- 2 rotisserie chicken breasts, diced optional OR
- 1 pkg. shrimp, deveined/cut into bite sized pieces optional OR
- 1 lb. Ground Italian Sausage, browned/drained
- grated cheddar cheese
Instructions
- In a Dutch oven, mix together mix, corn, milk, water, potato AND if desired, chicken or browned Italian sausage.
- Simmer for 15 minutes.
- If adding shrimp instead of chicken or sausage, add the last 10 minutes of cooking time.
- Serve and top with grated cheddar cheese, if desired.
Notes
Feel free to make it healthier by adding fat free half and half and reduced fat cheese to your soup. I also added some of my fresh freezer corn to the corn chowder giving it a fresher flavor. If you have access to that, I’d highly recommend it.
