You know I have shared other Mad Dash Mixes before and am a huge fan. May I suggest that you just simply go online and stock your pantry for quick and easy meals that don’t require a lot of time or heat in the kitchen this summer?

Those are two of my favorite words for summer meals…so I can fix you up.
As summer nears, I am finding myself cleaning my way out of the freezers to make sure that they are cleared out of old ingredients that need using or tossing when I came across some Sweet Italian Sausage. Lots of it in fact!
Italian sausage is my favorite for our Winter Tortellini Soup—but, something quick and easy to have for a Sunday night meal was where I was focused.
My husband has been begging for me to try the Mad Dash Mixes Red Beans & Rice and perhaps that sausage would be the perfect blend with this.
Two ingredients to add…Italian Sausage and red kidney beans to their packet…and the sausage was optional.
The first thing you need to know about this great seasoning company is that you can add ingredients and make them even better every time. The base is that good so that every new ingredient just adds new depth to the mix.
With that said, feel free to make recipes with their mixes your own. I do. Every. Time.
The Easiest Red Beans & Rice Recipe
Red Beans & Rice
Equipment
- 1 Dutch oven or Sauce pan with lid
- 1 cutting board
- 1 chef knife
- 1 2 c liquid measuring cup
- Stove
Ingredients
- 1 package Mad Dash Mixes Red Beans & Rice
- 2 cans Dark Red Kidney beans, drained/rinsed
- 8-16 oz Sweet Italian or Smoked Sausage, bite sized pieces
- 2 C water
Instructions
- Drain kidney beans, rinse and add to dutch oven or sauce pan.
- Add seasoning packet (remove moisture packet) and rice packet to kidney beans.
- Add 2 C water.
- Slice Italian or smoked sausage into bite sized pieces and add to pot.
- Bring to a boil. Then lower to a simmer, cover and cook for 20-25 minutes until rice is cooked.
Notes
Dinner in 30 minutes!
I’d say that’s a win for busy summer meals!
