This recipe didn’t originate in my kitchen…but, is enjoyed every year.
Who makes this great pumpkin bread? My sister. Each and every year, loaves of pumpkin bread are made and gifted to us.
Can I tell you that because she thinks of us and makes it for us when we visit or for family gatherings at Thanksgiving or Christmas, we are all grateful? My husband is BEYOND grateful—and she knows that!
There’s something about the sweet aroma of pumpkin bread baking that truly welcomes fall. Don’t you agree?
Simple Pumpkin Bread.
Not many different ingredients…or surprises…but, when made, the results warm our hearts.
If you are fortunate to be in the kitchen when this is in the oven, the most glorious smells will permeate your senses.
What is it about pumpkin bread that heralds fall, a sense of warmth and comfort?
My sister, Vickie, would never think this bread was anything special. She’s a no frills cook, she would tell you.
But, the simple preparation with creating this gift is what makes it special.
Her heart and hands are in the process of creating and giving.
I’ll have to pass her the tissue when she reads this, but, she truly is a treasured sister. One who gets called for serious issues, prayer requests, or just to share laughter.
Her wisdom, conversation and laughter are both appreciated. Each. And. Every. Time.
Weeks we have spent with feet under her table over decades. If we are fortunate to be close to her during the fall season, that pumpkin bread is made as a gift.
Celebrating Her Special Pumpkin Bread…
Here’s her recipe. Handwritten and tucked safely into her organized recipe file.
Such a simple recipe. No mixer needed!
Pumpkin Bread
Equipment
- oven
- Mixing bowl
- Measuring cups/spoons
- loaf pans
Ingredients
- 3 C all purpose flour
- 2 t baking soda
- 1 t nutmeg
- 1 t cinnamon
- 1/2 t salt
- 3 C sugar
- 1 C vegetable oil
- 4 large eggs
- 2/3 C water
- 2 C canned pumpkin
- butter or cooking spray to grease pans
Instructions
- Preheat oven to 350°.
- Grease two loaf pans with either butter or spray.
- Measure all ingredients.
- Whisk together first 5 dry ingredients in a large mixing bowl.
- Add sugar and mix into dry mixture.
- In a separate bowl, whisk together oil, water, and eggs.
- Add liquid ingredients and pumpkin to dry ingredients and stir with scraper until completely mixed.
- Fill 2 greased loaf pans 1/2 full and bake for 1 hour and 20 minutes.
- Let cool in pans on a cooling rack for 10 minutes before turning out to cool completely.
- Slice and serve warm or warm slices as needed when serving. Enjoy!
